Chef Sascha Lyon’s Tuesday Wing Nite menu at Delphine in Hollywood, from 5:30 PM – 10:30 PM, caters to the palate of chicken wing lovers and the pockets of happy hour go-ers in Los Angeles, providing menu options reflecting “the best late night and best street food flavors” all in a chicken wing.

Chicken Wings on a Tuesday?

Delphine offers a fun and casual dive bar styled menu of wings, sides, cocktails, and beers opposite the indulgent and upscale Raw Bar Mondays, as well as the standard sit down California bistro menu, while “maintaining the integrity of the product, consistent with the rest of the restaurant” says Chef Sascha. Chef Sascha’s chicken wings evoke flavors from Thai foods, Chinatown, and greasy 24 hour dining from his late night days in New York. Wing Nite runs parallel with Delphine’s weekly happy hour, aiming to create “a watering hole, a meet up spot,” to reinvigorate the Tuesday night scene in Los Angeles, as Chef Sascha tells us.

Spread Your Wings and Fry

Deep fried and slathered in sauce, the Wing Nite menu provides bright, ethnic flavors. Chef Sascha’s method of choice is to brine the wings for 24 hours in salt, sugar, citrus and herbs, to sous vide the chicken in an immersion circulator to guarantee the chicken is fully cooked but not overcooked, and then deep fry just enough to crisp the skin in peanut oil.

In addition to the standard Buffalo styled hot wings tossed in authentic Frank’s Red Hot sauce – the Delphine Red Hot, the Wing Nite menu also includes Honey Sriracha with pink pepper corn, authentically flavored Thai Red Curry, BBQ Beer with Green Chili, Spiced Honey with North African and Middle Eastern flavors, Truffle Cheese, and more.

Complementing this spread of wings are adult beverages ranging from Honey Bee and Early Tea cocktails to beers on draft. Green sides of celery and carrots with bleu cheese are also available. The official launch date of Wing Nite at Delphine Eatery & Bar was last Tuesday, September 20th and as Chef Sascha tells us, it will be running “until the world runs out of chicken wings.”

Wings Not Your Thing?

Delphine Eatery and Bar’s Happy Hour, Monday thru Friday from 5 PM – 7 PM, serves up crab, oysters, shrimp, pizza, meatball marina, and more. Delphine also offers Raw Bar Mondays with $1 shrimp, east coast oysters on the half shell, clams, and mussells as well as Jonah crab claw, west coast oysters on the half shell, grilled prawn, and more.
