Stone Brewing Co. announced big news yesterday and we were in Escondido, CA for all the action. We have the cold, hard, arrogant facts about the 2nd Stone Brewing World Bistro & Gardens Liberty Station, Stone Farms, Stone Company Store, Stone Hotel and more!
2nd Stone Brewing World Bistro & Gardens Liberty Station San Diego
A second restaurant will open at the historic Liberty Station complex in San Diego about 5 miles away from the San Diego Convention Center. The total space will be approximately 39,000 sq. ft. allowing seating for over 400 guests, 40 rotating tap handles and a bottle selection exceeding 100 choices. It will feature a ten barrel brewing system, private dining rooms for large groups, bocce courts, a movie screening venue and a Stone Company Store. Stone Brewing World Bistro & Gardens – Liberty Station is expected to open Spring 2012.
Liberty Station is part of a large building complex that was used by the U.S. Navy in WWII. Stone Brewing will be keeping the historical space intact, only altering drywall and concrete that’s there from recent reconstruction. The main dining area will be located in what was previously a Navy mess hall.

Stone Farms
The 18-acre farm is located minutes from Stone Brewing World Bistro & Gardens in Escondido. It will supply local, organic and sustainable produce. The farm will also function as a site for educational field trips for local schools and a venue for special events.

Stone Company Store South Park San Diego
The 1,100 sq. ft. retail space in San Diego’s South Park neighborhood will sell merchandise, growler fills, kegs and bottled beers to take home. The space will host about 14 different Stone Brewing Co. beers on tap. They will have tasters, but it will not run like a bar. Expected to open June 2011.

Stone Hotel
The 50-room boutique hotel is set to open sometime in 2013, next to Stone Brewing World Bistro & Gardens – Escondido.
Production Facility, Kitchen Expansion & Stone Catering
The 55,000 sq. ft. production facility will be adjacent to the current location and will double the space for brewing, barrel aged and specialty beer production, fermentation, and packaging. In addition, the facility will have a barrel-aging room and additional event space. The existing kitchen in Escondido will be expanded and a new kitchen will be built across the street to hold Stone Catering. Also, an electric vehicle charging station will be installed at Stone Brewing World Bistro & Gardens – Escondido.
New Beer Announcements
Their new beer line will feature 500 mL bottles of previously brewed collaboration beers that have been barrel aged to perfection, the first of the “Quingenti Millilitre” beers. The bottles are cork-and-caged and will be of very limited availability. The first beer announced as special re-release is the Ken Schmidt/Maui/Stone Kona Coffee Macadamia Coconut Porter collaboration beer, aged in bourbon barrels. Only 672 bottles will be available only from Stone Brewing Co. in Escondido. Exact details on the release are yet to be announced but it should be sometime in July.
Keep an eye out for sours … Old Guardian on oak wine barrels has been spotted.
Today, the company is brewing up a green tea double I.P.A. beer with Toshi Ishii of Guam’s Ishii Brewing. Proceeds from the collaboration beer’s profit will be donated to tsunami relief for Japan. Head Brewer Mitch Steele told us that in addition to enjoying the opportunity to work with Toshi, he’s excited to play with a couple of brand new hops he’s never used before, including Alsatian hops from France.
A new beer festival, “Pour It Black” will feature varieties of beers that are darker in color and will take place on November 13, 2011. More details to come.
