We’re big fans of the late comedian Mitch Hedberg. The man is not only known for his quirky one-liners, he’s also written some of the best food related jokes ever. Mitch’s website was recently relaunched, filled with notes and unreleased jokes. We found a hand written Thai BBQ Chicken recipe on the new site and we’re going to try to make it. We want you to do it too. Let’s get cooking!

The Recipe

Thai BBQ Chicken

Sauce
1/2 C. Water
1/2 C. Rice Vinegar
1/4 C. Honey
2 tsp. Plum Sauce
1 tsp. Thai Fish Sauce
1 tsp. Lime or Lemon Juice
2 tsp. Tomato Paste
1 tsp. Crushed Garlic
1 tsp. Serrano Chili (chopped)
Dash. Paprika
1/2 tsp. Salt
1 tsp. Crushed Red Chili Pepper. Tapioca Powder

Marinade
1 1/2 C. Coconut Milk
1/2 C. Chopped Garlic
1/4 C. Chopped Ginger
1/4 C. Olive Oil
2 tsp. Thai Fish Sauce
2 tsp. Curry Powder
1 tsp. Black Pepper
1 tsp. Tumeric
1 tsp. Honey

Cooking Instructions
Massage Chicken.
Pierce with fork.

Marinade chicken.
Bake at 350°
for about 45 min.

Grill chicken quickly.

Serve with grilled pineapple.
