Boneyard Bistro on Ventura Blvd. in Sherman Oaks, CA recently reopened with a new and improved bar and a colossal selection of craft beer. We talked to Chef Aaron Robins and Bar Manager Rory Snipes about their love of the bistro and its new expansion.

Release the Rory!

A year and a half ago, Rory Snipes moved to Los Angeles from Seattle where he worked at the beer-loving Brouwer’s Cafe. Boneyard Bistro owner Chef Aaron Robins hired Rory as the Bar Manager and gave him total control of what should appear on the restaurant’s beer menu. Aaron, a wine fan and occasional home-brewer, started the bistro back in 2005 with a Zinfandel-heavy selection and only three beers on draft. When the recession hit, wine sales suffered and Boneyard Bistro cleverly shifted their attention to developing a strong beer selection. Aaron told us that Rory helped the bar shift in a new (and better) direction. Rory has curated an extensive beer list at Boneyard Bistro that includes over 100 bottles and 40 beers on tap.

At the Core, There is Bacon

Aaron studied culinary arts with an emphasis in Asian fusion cooking, but his real love is barbeque. He had always enjoyed it as a hobby and soon realized his killer BBQ was what he had to pursue. With dishes like the bourbon and porter kangaroo satay, the deep fried tortilla-crusted brie, and the mussels with beer-steamed chorizo, Aaron is taking the beer and barbeque experience to a new level. Sous-chef Nicci Piscitelli gave us a preview of her sweet and savory bacon masterpiece — bacon and whole almonds covered in almond slivers and an Ommegang Abbey Ale reduction syrup (pictured below). It was not on the table for long.

BBQ Stands for Bourbonque

Boneyard Bistro will be introducing a variety of bourbons to their menu within the next few weeks. Aaron was very emphatic in explaining to me that I have not had barbeque until I have had barbeque with bourbon. This October, Boneyard Bistro will pair their menu with different breweries for L.A. Beer Week. The restaurant is also planning to introduce beer and cheese pairings. My fave! See you on their patio on a warm summer night!
